Dead-set it used to be my least favourite vegetable- until I discovered Cauliflower soup. Oh my goodness- what I had been missing all these years! It's so easy to make, yummy and the perfect healthy meal in these cold winter months.
I served mine with a little bit of fried chorizo and parmesan cheese but it can be served plain as well- still yummy!
1 large cauliflower, chopped into florets (approximately 1kg)
2 onions, diced
2 garlic cloves (crushed)
1L chicken stock (reduced salt)
1 tablespoon olive oil
1) Heat olive oil in large saucepan, add onion and garlic and cook until onion is soft
2) Add cauliflower and chicken stock
3) Bring to boil and then simmer until cauliflower is soft.
4) Using a hand food processor, blitz until smooth (or you can transfer to a blender)
