Pizza Dough and Sauce

March 21, 2018

It's so nice to have something to look forward to at the end of the working and school week, and for me and my family, that's my delicious homemade pizza. We love, love, love our Friday night pizza in my house, and my kids actually prefer mine to the local takeaway (winning!!).

A few years ago I decided to experiment with making the bases and the sauce and have settled on these recipes. I prefer to make my own as the store-bought ones have a lot of added salt and preservatives, and I actually find rolling the dough out therapeutic (weird, hey?) and my kids also love seeing me flip the bases up in the air pizza-shop style!!

As a dietitian and mum, I'm pall about encouraging kids to take a greater interest in preparing meals, and making the dough, rolling out the dough, helping make the sauce, and getting the kids to choose their own toppings for their pizzas is a fun way to achieve this.

There are so many options for toppings but here are some of my personal favourites:

1. Lamb, spanish onion, cheese, topped with natural yoghurt and fresh mint when out of the oven

2. Prosciutto, olives, thinly sliced tomato and bocconcini, topped with fresh basil when out of the oven

3. Chorizo sausage, ham, spanish onion, olives, semi-dried tomatoes, bocconcini, topped with fresh basil or rocket when out of the oven

4. Sweet potato, spanish onion, topped with feta cheese, rocket and a drizzle of balsamic glaze when out of the oven.

Pizza Sauce

400g fresh tomatoes or 400g reduced salt tinned tomatoes

1 clove crushed garlic (or 1 teaspoon minced garlic)

2 Tablespoons chopped basil

1 tablespoon olive oil

Heat oil in saucepan, add garlic and cook until it begins to brown

Add tinned tomatoes for cook for 10 minutes

Remove from heat, add chopped basil

Blend with stick blender until smooth

(suitable to freeze)

Pizza Dough (makes 2 bases)

2½ cups bakers flour

200ml water

1 tablespoon olive oil

1¾ teaspoons yeast

Mix all ingredients in a bowl

Knead on a floured surface until soft

Spray a bowl with cooking spray and place dough in it. Let dough rise for about an hour

Divide in half and roll out into two rounds
