If you're looking for a really tasty snack that is also good for you, look no further than this recipe for Banana cake (which can easily be made into a Banana bread or Banana muffins).
For this recipe, I have replaced the butter with olive oil spread, which contains lots of unsaturated fats which are good our heart, as opposed to the saturated fats in butter.
This recipe also only uses 1/3 cup of sugar, but is still a lovely sweet cake due to the 6 pieces of fruit it uses (yes- that's right- 6 pieces of fruit!!) And given it has 6 pieces of fruit, it is also a lot higher in fibre than most cakes.
So that's three ticks for this cake- it contains heart-healthy fats, minimal added sugar and added fibre for digestive health! And most importantly, its really tasty too :)
A great recipe to use up those apples and bananas that are looking a little past their best.
olive oil cooking spray
1/2 cup olive oil spread
1/3 cup sugar
2 cups self-raising flour
3 ripe bananas, mashed
3 apples, grated
1/2 cup low-fat milk
Set oven to 180°C (160°C fan forced).
Spray square cake tin with cooking spray (or a loaf tin if making banana bread) and insert some baking paper.
Beat the olive oil spread and sugar with electric beaters until creamy.
Add one egg at a time, mix well.
Add the flour into the mixture and stir gently with a wooden spoon.
Add bananas, apples and milk to the mixture and stir until just combined.
Pour the mixture into the greased pan and bake for 50-60 minutes or until just golden and a skewer inserted into the middle comes out clean.
Can also be used to make mini muffins
