Oat and date cookies

So, by now most of us are back into the swing of the new year and that means back to work and school, and with that comes packing lunch boxes.

These little cookies are the perfect treat to pack- with the fibre of oats, the healthy fats in the olive oil spread and natural goodness of dates they are a sweet little healthy something to munch on.

Ingredients

1¼ cups pitted dates, chopped

125g olive oil spread, melted

¾ cup brown sugar

1¼ cup self raising flour

1egg

1 teaspoon vanilla

1 teaspoon cinnamon

1½ cups rolled oats

extra flour

Method

Set oven to 180 degrees

Beat eggs in a small bowl

Add brown sugar, self-raising flour, vanilla, cinnamon and oats to a large bowl

Add egg and melted butter to the bowl, mix with a wooden spoon

Coat hands with extra flour and shape into approximately 12 small balls

Place onto baking trays lined with baking paper and bake for 10 minutes or until golden brown
