Lamb Salad
Lamb is my favourite meat and the flavours in this salad are just so delicious. This recipe is from the CSIRO Total Wellbeing recipes, and the first time I made this I felt like I was at a fancy restaurant- that's not to brag about my cooking skills, but to tell you about the amazing flavour combination of this dish!! So good....

Ingredients (serves 4)
800g lamb leg steaks
1 teaspoon ground cumin
1 tablespoon lemon juice
1 clove crushed garlic (or 1 teaspoon minced garlic)
2 tablespoons olive oil
2 oranges
1/2 spanish onion
1/4 cup chopped coriander
100g feta cheese
250g baby spinach or rocket leaves
Method
Combine the cumin, garlic, lemon juice and 1 tablespoon olive oil in a bowl, add lamb steaks to marinate, covered, for about 30 minutes.
Peel and chop orange into rough pieces, chop onion finely.
Add orange, onion, and baby spinach/rocket to a serving dish.
Cook lamb in a frypan or grill until cooked to your liking.
Slice lamb thickly and arrange over orange, onion and baby spinach/rocket.
Sprinkle coriander and feta on top, along with any pan juices remaining.
