Feeding a big family can be challenging when everyone seems to like different things so I get really excited when I find a recipe that everyone loves! These Thai Chicken Balls are one such recipe- and better still they are really easy to make.
If your kids enjoy cooking, or you're trying to get them involved in the process, this is a great recipe to try making with them - grating the veggies, measuring out the ingredients and shaping them into balls are all tasks that your kids can help with.
I often serve these with homemade wedges or rice and salad, but they can also be made into patties to make a delicious homemade chicken burger.
500g chicken mince
1 zucchini, grated
1 carrot, grated
1 cup wholemeal breadcrumbs
1 – 2 tablespoons sweet chilli sauce
1 tablespoon lime juice
1 tablespoon salt-reduced fish sauce
olive oil, for frying
1. In a large bowl, mix together chicken mince, zucchini, carrot and breadcrumbs
2. Mix in sweet chilli sauce, lime juice and fish sauce
3. Roll mixture into small balls
4. Heat olive oil in a frying pan, place chicken balls in the frypan and cook, turning over, until golden brown and cooked through
